What it means
A bread roll — but only in Berlin and Brandenburg. Ask for a Schrippe in Munich and you will get a blank look.
The bread roll is Germany's sharpest regional shibboleth: Brötchen in most of the north and centre, Semmel in Bavaria and Austria, Weck or Weckle in Swabia and Franconia, Rundstück in Hamburg, Bröt'chen reduced to Brötsch in parts of the west.

Where it comes from
Probably from schrippen / schripfen, a Middle German verb meaning to scratch or score — the roll is named for the cut down its top. The competing derivation from 'schrumpfen' is not supported.
